Walnut Pesto

¼ cup raw walnuts

2 cups packed basil

⅓ cup grated parmesan

3 tbsp lemon juice

½ cup extra virgin olive oil

1 garlic clove
-
pinch of sea salt
Sandwich

1 large ciabatta bread
-
5-6 thin slices of turkey
-
4 slices gouda cheese
-
1 cup shredded lettuce
-
⅓ cup chopped pickles
-
1 avocado, sliced
-
1 ½ cups sweet potato fries
Instructions:

Preheat the air fryer to 400°F. Cook the sweet potato fries for 11-12 minutes until golden and crispy.

Meanwhile, make the pesto by adding the walnuts to a food processor. Pulse until walnuts are crumbled. Then, add the remaining ingredients and pulse until everything is well combined. Set aside.

Preheat the oven to 250°F. Cut the ciabatta bread in half and drizzle olive oil inside each slice. On the bottom slice, lay the slices of gouda. Place both slices of bread in the oven and toast for about 10 minutes, until the gouda is melted.

Remove from the oven and add the turkey, shredded lettuce, pickles, and sweet potato croutons on top of the gouda slice.

On the other slice, spread all of the walnut pesto in an even layer, then mash the avocado on top. Place over the other slice, cut in thirds, and enjoy fresh!
