This Sweet Potato Veggie Fajitas recipe combines all the delicious flavors of classic fajitas with crispy sweet potatoes for the perfect healthy plant-based meal. This recipe is easy to make and guaranteed to be a hit amongst all!

Ingredients:

1 bag Roots Farm Fresh Sweet Potato Croutons

1 onion

2-3 bell peppers 

3 cloves garlic 

1-2 tablespoons avocado oil

½ teaspoon cumin 

½ teaspoon oregano

1 teaspoon chili powder

¼ teaspoon cayenne pepper

½ teaspoon sea salt 

1 cup cooked yellow rice

½ cup refried beans 

Fresh cilantro to top

Instructions:
  • Prepare Sweet Potato Croutons:
    1. If not pre-cooked, bake the Roots Farm Fresh Sweet Potato Croutons according to the package instructions until they are crispy.
  • Sauté Vegetables:
    1. In a large skillet, heat avocado oil over medium heat. Add sliced onions, bell peppers, and minced garlic. Sauté until the vegetables are tender and slightly caramelized.
  • Season with Spices:
    1. Sprinkle cumin, oregano, chili powder, cayenne pepper, and sea salt over the sautéed vegetables. Stir well to coat the vegetables evenly with the spices.
  • Warm Refried Beans:
    1. In a separate small pot, warm the refried beans over low heat, or microwave them in a microwave-safe bowl.
  • Assemble Fajitas:
    1. On each tortilla, spread a layer of the warmed refried beans and yellow rice. Top with the vegetable mixture and sweet potato croutons.
  • Garnish with Cilantro:
    1. Sprinkle fresh cilantro on top for a burst of freshness and added flavor.
