Ingredients:1 bag Roots Farm Fresh Sweet Potato Croutons
1 onion
2-3 bell peppers
3 cloves garlic
1-2 tablespoons avocado oil
½ teaspoon cumin
½ teaspoon oregano
1 teaspoon chili powder
¼ teaspoon cayenne pepper
½ teaspoon sea salt
1 cup cooked yellow rice
½ cup refried beans
Fresh cilantro to top
Instructions:- Prepare Sweet Potato Croutons:
- If not pre-cooked, bake the Roots Farm Fresh Sweet Potato Croutons according to the package instructions until they are crispy.
- Sauté Vegetables:
