Ingredients:

  • 1 bag Roots Farm Fresh Sweet Potato Croutons
  • 2 containers gnocchi 
  • 1 onion 
  • 1 bunch kale
  • 1 cup baby bella mushrooms
  • 3 cloves garlic 
  • 3 cups water or vegetable broth
  • ½ teaspoon ground sage
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper 
  • ½ teaspoon garlic salt
  • ⅓ cup vegan (or regular) parmesan cheese

Instructions:

  1. Cook the Vegetables:
    • Heat a splash of oil or broth in a large pot over medium heat.
    • Add diced onions and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
    • Add chopped kale and sliced baby bella mushrooms to the pot.
    • Stir well and cook for 5-7 minutes until the kale is wilted and the mushrooms are tender.
  2. Add the Broth and Seasonings:
    • Pour in the water or vegetable broth.
    • Stir in ground sage, Italian seasoning, black pepper, and garlic salt.
    • Bring the mixture to a gentle simmer.
  3. Cook the Gnocchi:
    • Add the gnocchi directly to the pot with the vegetables and broth.
    • Stir gently and let it cook for 5-7 minutes, or until the gnocchi is tender and floats to the surface.
  4. Incorporate the Sweet Potato Croutons:
