Sweet Potato Flatbread

Ingredients:Shop ingredients at your local Kroger store.
- 1 10-inch flatbread crust
- ½ cup Roots Sweet Potato Croutons
- 2 garlic cloves, minced
- ¼ red onion, sliced
- 1 cup shredded cheese blend
- 2 large handfuls kale, chopped
- ¼ cup sundried tomatoes, chopped
- olive oil, for drizzling
Instructions:
- Preheat the oven to 350˚F.
- Cook the flatbread crust according to the instructions on the box. Drizzle olive oil over the precooked flatbread crust, then sprinkle and spread the minced garlic overtop.
- Sprinkle ¾ of the shredded cheese, then add the kale, red onions, sweet potato croutons, the remaining cheese, and a pinch of salt and pepper.
- Bake for 15-20 minutes, then broil for 2 minutes to slightly brown the sweet potato croutons.
- Remove from the oven, spread the sundried tomatoes over the pizza, top with crumbled feta, and hot honey if desired. Serve warm and enjoy!
