This vibrant Holiday Flatbread with Sweet Potato Croutons is filled with wholesome, bold flavors and vibrant colors. Ingredients:

Shop ingredients at your local Kroger store.

  • 1 10-inch flatbread crust
  • ½ cup Roots Sweet Potato Croutons
  • 2 garlic cloves, minced
  • ¼ red onion, sliced
  • 1 cup shredded cheese blend
  • 2 large handfuls kale, chopped
  • ¼ cup sundried tomatoes, chopped
  • olive oil, for drizzling
Toppings: feta crumbles, hot honey

Instructions:

  1. Preheat the oven to 350˚F. 
  2. Cook the flatbread crust according to the instructions on the box. Drizzle olive oil over the precooked flatbread crust, then sprinkle and spread the minced garlic overtop. 
  3. Sprinkle ¾ of the shredded cheese, then add the kale, red onions, sweet potato croutons, the remaining cheese, and a pinch of salt and pepper. 
  4. Bake for 15-20 minutes, then broil for 2 minutes to slightly brown the sweet potato croutons. 
  5. Remove from the oven, spread the sundried tomatoes over the pizza, top with crumbled feta, and hot honey if desired. Serve warm and enjoy!
