Sweet Potato Caprese Sandwich
These Sweet Potato Caprese Sandwiches are the perfect recipe for summer days because they are simple and fresh, and the ingredients are plentiful and in season! The sourdough slices are brushed with basil pesto, and stuffed with mozzarella slices, arugula, fresh tomatoes, sweet potato toasts, and a balsamic glaze drizzle. Ingredients:Shop ingredients at your local Kroger store.
- ½ bag Roots sweet potato toasts
- 6 slices of sourdough bread
- 6 mozzarella slices
- 6 slices of fresh tomatoes (about 1 medium-sized tomato)
- handful of baby arugula
- 1 tbsp extra virgin olive oil
- balsamic glaze
- homemade or store-bought basil pesto
Instructions:
- Preheat the air fryer to 400° F.
- Cook the sweet potato toasts in the air fryer for 12-14 minutes, or until golden and crispy.
- Meanwhile, slice the tomatoes add them to a plate. Drizzle the olive oil on top and sprinkle with a pinch of salt. Set aside.
- Add a small spoonful of the basil pesto inside each slice of sourdough. Then layer one slice with arugula, two mozzarella slices, 1-2 cooked sweet potato toasts, two tomato slices, a drizzle of balsamic glaze, and more arugula. Add the other slice of bread on top and cook in a panini press for about 5 minutes, or until the bread is slightly golden and crisp. Enjoy!
