Sweet Potato Breakfast Skillet

Consider your weekend brunch plans made. This Easy Breakfast Hash serves four, is ready in half an hour, and is absolutely made to fuel your long workout or cure your hangover. Whatever you need, this dish will deliver. Crispy sweet potato croutons alongside spicy breakfast sausage, tender bell peppers, and runny yolks - I don’t know about you, but that sounds like the perfect brunch to me!

Ingredients

2 cup sweet potatoes croutons

1 lb breakfast sausage of choice

2 bell pepper, diced

¼ white onion, diced

4 large eggs

½ tbsp oil

Salt & pepper to taste


Optional toppings

½ cup cheddar cheese

Chives

Hot sauce

Instructions
  1. Prepare vegetables. Dice bell pepper and onion. 
  2. Preheat a large cast iron skillet or enameled cast iron skillet with oil over medium heat. Add sausage and break up with a wooden spoon into small pieces. Cook until thoroughly browned. 
  3. Once browned, remove the sausage from the pan. Add sweet potatoes and allow to thaw and brown before adding onions and bell pepper. Stirring occasionally, cook until the vegetables are tender, and the sweet potatoes are browned, about 6-8 minutes.
  4. Once cooked, return the sausage to the pan and create four wells in the hash. Crack the eggs into the wells, and cover. Cook for 4-6 minutes, or until the yolks reach desired doneness. 
  5. Remove from the heat and add cheese, fresh herbs, or hot sauce to your liking. Enjoy!
