- 1 bag Roots sweet potato toasts
Toast 1: Mozzarella, peaches, and basil
- Mozzarella slices
- Fresh (or grilled) peach slices
- Fresh basil
- Drizzle of honey
Toast 2: Mashed chickpea, prosciutto and thyme
- ½ cup chickpeas, drained and rinsed
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- Prosciutto slices
- Fresh thyme
- Drizzle of honey
Toast 3: Strawberry jam, blueberries, and lemon zest
- Strawberry jam
- Fresh blueberries
- Lemon zest
- Chia seeds
Toast 4: Mashed avocado, tomatoes, balsamic and feta
- 1 avocado
- ½ lime
- Baby tomatoes
- Balsamic glaze
- Feta crumbles
- Pinch of salt
Toast 5: Mozzarella, strawberries, and balsamic
- Mozzarella slices
- Fresh strawberries, sliced
- Balsamic glaze
- Fresh basil
Instructions:
- Preheat the air fryer to 400° F.
- Cook the sweet potato toasts in the air fryer for 12-14 minutes, or until golden and crispy.
- Meanwhile, prepare the chickpea mash by mashing the chickpeas, olive oil, lemon juice, and salt with a fork in a small bowl. Alternatively, you can use store-bought hummus to replace the chickpea mash.
- In a separate small bowl, mash the avocado, lime juice, and pinch of salt. Alternatively, you can use store-bought guacamole to replace the avocado mash.
- Prepare each toast however you’d like and enjoy!
