Spring Roll Bowl with Sweet Potato Croutons

Ingredients:

Shop ingredients at your local Kroger store.

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1/2 cup sweet potato croutons
  • 1 tbsp sesame oil 
  • 2 tbsp avocado oil 
  • 1/2 cup cooked edamame 
  • 1 cup cooked rice vermicelli noodles
  • 1/2 cup chopped cucumbers
  • 1/4 cup sliced radishes
  • 2 cups shredded lettuce
  • 1/2 tsp salt
Peanut sauce 
  • 1/3 cup peanut butter
  • 1/4 cup soy sauce 
  • 1 tbsp rice vinegar
  • 2 tbsp honey
  • 2 tbsp sesame oil
  • 1/2 lime, juiced 
  • 2 tsp grated ginger
Toppings: green onion, peanuts

Instructions:

  1. Season the chicken with salt, black pepper, and sesame oil. Toss until the oil is well combined with the chicken. Set aside. 
  2. Add the avocado oil to a hot skillet. Evenly add the chicken to the skillet and sear on medium/high heat for 5 minutes on one side. Flip and lower the heat to medium. Cook for another 2-3 minutes. 
  3. Meanwhile, prepare the sauce by adding all of the ingredients to a bowl and whisking until well combined. Set aside. 
  4. Cook the sweet potato croutons in an air fryer at 400° F for 10-12 minutes until slightly crispy. 
  5. Prepare the bowl! Add the noodles, lettuce, cucumbers, radishes, chicken, and edamame. Pour the peanut sauce over the bowl and top with peanuts and green onions. Enjoy!
