Ingredients:

1 bag Roots Farm Fresh Sweet Potato Fries 

3 cups fresh spinach 

1 block extra firm tofu 

1 cup bell peppers 

3 medium carrots 

1 avocado 

1 ½ cups cooked quinoa 

1 tablespoon hemp seeds 

1 tsp fresh rosemary

2 tsp paprika

Salt and pepper to taste

¼ tsp ground cumin

1 tsp dried garlic

½  tsp dried onion

1 tbsp olive oil


For the dressing:

¼ cup olive oil 

3 tablespoons balsamic vinegar 

2 tablespoons pure maple syrup 

Salt and pepper to taste


Instructions:

  1. Prepare The Veggies and Tofu:
  • Chop the tofu into 1-inch cubes, and slice the carrots and peppers. 
  1. Cook The Veggies:
  • Place the veggies, Roots Farm Fresh Sweet Potato Fries, and tofu in the air fryer and coat with oil and seasonings. Toss until evenly coated.
  • Air fry at 390 for 15 minutes or until veggies and tofu are crispy.
  1. Prepare the Dressing:
  • In a small bowl, whisk together the olive oil, balsamic vinegar, pure maple syrup, and a pinch of salt and pepper until well combined.
  1. Assemble the Bowls:
  • Divide the cooked quinoa and spinach evenly among four bowls.
