Quinoa Patties- 2 cups cooked quinoa
- 2 tbsp avocado oil
- 1 15 oz can black beans, drained and rinsed
- 1 tbsp tomato paste
- 1 egg, whisked
- ½ cup almond flour
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp sea salt
Caramelized Onions
- 2 tbsp avocado oil
- 1 onion, thinly sliced
- pinch of salt
Other Additions
- 6 burger buns
- 6 slices cheese
- mashed avocado
- ketchup, for extra fries
Instructions:
- Preheat the air fryer to 400° F.
- Cook the sweet potato fries for 12-15 minutes, until slightly golden and crispy.
- Prepare the quinoa patties. Add the black beans to a mixing bowl and mash with a potato masher. Add the remaining ingredients except the oil to the mashed beans and mix until everything is well combined. Form 5 patties with your hand and place them in the fridge.
- Caramelize the onions in a hot skillet with the avocado oil for 15-17 minutes, stirring often.
- Remove the onions from the skillet and add 2 tbsp of avocado oil for the patties. Cook the patties for 5 minutes on each side over medium heat, flipping carefully so they stay intact. Place the cheese slices on top of the patties and cook covered for 3 minutes over low heat.
- Assemble your burgers! Add the patty, caramelized onions, a small handful of sweet potato fries and mashed avocado under the top bun. Serve with sweet potato fries and a side of ketchup. Enjoy!
