Mexican-Style Sweet Potato Toast with Green Goddess Dressing
These vegetarian Mexican-Style Sweet Potato Toasts are incredibly bright, nutritious, and easy to make! Each toast is topped with mashed avocado, a black bean and corn mix, quick pickled purple cabbage, and a bright and beautiful green goddess dressing. The dressing is made with greek yogurt, cilantro, avocado, and jalepeño for a small hint of spice. Enjoy these fresh as a snack or for lunch or dinner!

- 1 cup black beans
- 2 avocados
- 2 limes
- ½ cup corn
- ⅓ cup cherry tomatoes
- 3 tbsp chopped red onion
- 5-6 sweet potato toasts
- 1 cup shredded purple cabbage
- ¼ cup plain greek yogurt
- 1 ½ cups cilantro
- ½ jalapeño, halved and seeded
- salt and pepper, to taste
Instructions:
- In a small bowl, add the shredded cabbage, juice from half a lime and a pinch of salt. Mix and set aside.
- Mix the chopped red onion, black beans, corn, cherry tomatoes, a squeeze of half a lime, and salt and pepper in a medium-sized mixing bowl.
- Make the goddess sauce by adding 1/2 avocado, the jalapeño, cilantro, greek yogurt, juice from 1 lime, and a pinch of salt to a food processor. Add 1 tbsp of water at a time until it reaches desired consistency.
- Cook the sweet potato toasts in an air fryer at 400°F for 12 minutes, or until crispy.
- Prepare the toast by mashing the avocado on top, adding a few spoonfuls of the black bean mix, the cabbage slaw, and the dressing.
- Serve fresh and enjoy!
