Ingredients:

1 bag Roots Farm Fresh Sweet Potato Fries

1 lemon 

2 tablespoons extra virgin olive oil

⅓ cup dairy-free or dairy-based parmesan cheese

1 sprig fresh rosemary

⅓ cup dairy-free or dairy-based ricotta cheese

1 tablespoon lemon zest

Instructions:
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the Roots Farm Fresh Sweet Potato Fries  lemon juice and extra virgin olive oil. Toss until the sweet potato fries are evenly coated.
  3. Spread the coated sweet potato Fries on a baking sheet lined with parchment paper or aluminum foil.
  4. Sprinkle the parmesan cheese over the fries.
  5. Strip the rosemary leaves from the sprig and sprinkle them over the sweet potato fries.
  6. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the sweet potato fries are golden brown and crispy, tossing halfway through to ensure even cooking.
  7. Once the sweet potato croutons are done baking, remove them from the oven and let them cool slightly.
  8. Pipe or dollop the ricotta on top of the fries, and garnish with additional lemon zest and freshly ground black pepper, if desired.
