1 bag Roots Farm Fresh Sweet Potato Fries
1 lemon
2 tablespoons extra virgin olive oil
⅓ cup dairy-free or dairy-based parmesan cheese
1 sprig fresh rosemary
⅓ cup dairy-free or dairy-based ricotta cheese
1 tablespoon lemon zest
Instructions:- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the Roots Farm Fresh Sweet Potato Fries lemon juice and extra virgin olive oil. Toss until the sweet potato fries are evenly coated.
- Spread the coated sweet potato Fries on a baking sheet lined with parchment paper or aluminum foil.
- Sprinkle the parmesan cheese over the fries.
- Strip the rosemary leaves from the sprig and sprinkle them over the sweet potato fries.
