Greek Salad with Sweet Potato Fries and Feta Pesto

This Lemon Chicken Greek Salad with Sweet Potato Fries and Feta Pesto is nothing but vibrant, fresh, and delicious. It’s loaded with vitamins and minerals from the lettuce, cucumbers, tomatoes, olives, and healthy fats from the avocado and walnut feta pesto. The pesto is what ties all of the salad ingredients together and makes every bite so flavorful. The sweet potato fries make for the best crunchy addition and add a subtle hint of sweetness to balance out the acidity from the lemon. It truly makes for the perfect salad to enjoy for dinner during the week!

Lemon Chicken 
  • 1 lb chicken breasts, cut into chunks
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp oregano
  • ½ tsp basil
  • ½ tsp paprika
  • ½ tsp salt
  • zest and juice of 1 lemon
Salad
  • 1 bag sweet potato fries
  • 4 cups chopped romaine lettuce
  • 2 persian cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • ⅓ cup kalamata olives, halved
  • 1 avocado

Feta Pesto

  • 2 cups fresh basil leaves
  • ½ cup crumbled feta
  • ½ cup extra virgin olive oil
  • ¾ lemon juiced
  • ¼ cup walnuts
  • 1 clove garlic
  • 4 tbsp water 
Instructions:
  1. In a small bowl, mix all of the lemon chicken ingredients until the chicken is well coated in the olive oil and spices. 
  2. Add the sweet potato fries to an air fryer at 400° F for 12 minutes, until the sweet potato fries are slightly golden and crispy. 
  3. Meanwhile, add the chicken to a skillet in an even layer and cook for 10 minutes, stirring occasionally.
  4. Make the feta pesto by adding all of the ingredients to a high-speed blender or food processor and blend until the consistency is creamy. Add 1 tbsp of water at a time until it reaches desired consistency. 
  5. Assemble the salad! In a bowl, add the lettuce, cucumber, tomatoes, olives, chicken, sweet potato fries, and drizzle as much feta pesto over the top as you’d like. 
  6. Serve with extra lemon and feta crumbles and enjoy!

Notes: 

  • Tastes best fresh! Store leftover feta pesto in the fridge for up to 3 days.
