Ingredients:
Salad
- 1 bag of Roots frozen sweet potato fries
- 1 can white beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 4 cups shredded kale
- 2 persian cucumbers, sliced
- ⅓ cup crushed walnuts
- ¼ cup dried cranberries
- ¾ cup feta cheese crumbles
- ⅓ cup extra virgin olive oil
- 2 tablespoons dijon mustard
- 3 tablespoons honey
- 2 tablespoons tahini
- squeeze of 1 lemon
- Preheat the oven to 400˚F.
- Toss the white beans in the olive oil, chili powder, cumin and a pinch of salt. Lay the sweet potato fries on a baking sheet lined with parchment paper with the white beans. Bake for 25 minutes.
- Meanwhile, prepare the dressing by whisking all ingredients in a small bowl until smooth. Feel free to add 1 tbsp of water to thin.
- Gently massage the kale with a small drizzle of olive oil and a pinch of salt in a large salad bowl. Assemble the remaining salad ingredients and serve with the baked sweet potato fries, white beans, and a generous drizzle of the dressing. Enjoy!
