Kale Salad with Sweet Potato Fries

Ingredients:

Salad

  • 1 bag of Roots frozen sweet potato fries
  • 1 can white beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 4 cups shredded kale
  • 2 persian cucumbers, sliced
  • ⅓ cup crushed walnuts
  • ¼ cup dried cranberries
  • ¾ cup feta cheese crumbles
Honey Mustard Dressing 
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons tahini
  • squeeze of 1 lemon
Instructions:
  1. Preheat the oven to 400˚F. 
  2. Toss the white beans in the olive oil, chili powder, cumin and a pinch of salt. Lay the sweet potato fries on a baking sheet lined with parchment paper with the white beans. Bake for 25 minutes. 
  3. Meanwhile, prepare the dressing by whisking all ingredients in a small bowl until smooth. Feel free to add 1 tbsp of water to thin.
  4. Gently massage the kale with a small drizzle of olive oil and a pinch of salt in a large salad bowl. Assemble the remaining salad ingredients and serve with the baked sweet potato fries, white beans, and a generous drizzle of the dressing. Enjoy!
