- 1 bag Roots sweet potato toasts
- 2 tbsp avocado oil
- 1 lb shrimp, patted down dry
- 6 cloves garlic, minced
- 1 tbsp honey
- ¼ cup soy sauce
- ¼ cup water
- 1 lime
- guacamole
Optional additions: crumbled feta, extra lime juice
Instructions:
- Preheat the air fryer to 400° F.
- Sprinkle a pinch of salt over the shrimp.
- Whisk the soy sauce, water, and honey in a small mixing bowl. Set aside.
- Cook the shrimp in the avocado oil for about 3 minutes on each side.
- Remove the shrimp from the skillet and add the garlic.
- Cook the garlic for about 4 minutes over medium heat, ensuring it does not burn. Add the soy sauce mix and reduce until it bubbles and thickens, about 5 minutes.
- Toss the shrimp in the skillet with the sauce and squeeze fresh lime juice on top.
