Garlic Parmesan Crinkle Cut Fries

These Garlic Parmesan Crinkle Cut Fries are delicious, but the pistachio pesto adds a bright, herby touch that makes it hard to dip into only once! Made with real pistachios, this pesto has the perfect amount of crunch. Use store-bought pesto to bring this recipe together faster, and enjoy the fries on the side or with the pesto drizzled on top!

Ingredients:

  • 1 bag Roots crinkle cut fries
  • ¼ tsp garlic powder
  • ¼ tsp ground black pepper
  • 2 tbsp shredded parmesan cheese
  • pinch of salt
Pistachio Pesto
  • 2 cups fresh basil
  • ½ cup extra virgin olive oil
  • ⅓ cup shredded parmesan
  • ¼ cup pistachios
  • 3 tbsp lemon juice
  • sea salt and pepper, to taste
Instructions:
  1. Preheat the oven to 400° F. Place the crinkle cut fries on a baking sheet lined with parchment paper and toss with the garlic powder, black pepper, and a pinch of salt. Bake for 25 minutes or until slightly golden and crispy.
  2. Meanwhile, make the pistachio pesto by adding all the ingredients to a food processor and blend until creamy, scraping down the sides as needed. 
  3. Serve the pistachio pesto in a small serving bowl with the crinkle-cut fries. Sprinkle the parmesan on top of the fries while they’re hot so it melts. Enjoy!
