Garlic Parmesan Crinkle Cut Fries

- 1 bag Roots crinkle cut fries
- ¼ tsp garlic powder
- ¼ tsp ground black pepper
- 2 tbsp shredded parmesan cheese
- pinch of salt
- 2 cups fresh basil
- ½ cup extra virgin olive oil
- ⅓ cup shredded parmesan
- ¼ cup pistachios
- 3 tbsp lemon juice
- sea salt and pepper, to taste
- Preheat the oven to 400° F. Place the crinkle cut fries on a baking sheet lined with parchment paper and toss with the garlic powder, black pepper, and a pinch of salt. Bake for 25 minutes or until slightly golden and crispy.
- Meanwhile, make the pistachio pesto by adding all the ingredients to a food processor and blend until creamy, scraping down the sides as needed.
- Serve the pistachio pesto in a small serving bowl with the crinkle-cut fries. Sprinkle the parmesan on top of the fries while they’re hot so it melts. Enjoy!
