French Onion Soup with Sweet Potato Toast

French Onion Soup is a classic for good reason, and our sweet potato toasts add the perfect twist to this

Ingredients

8 Roots Sweet Potato Toasts

3 large yellow onions

4 cups vegetable or beef stock

1 cup Gruyere cheese, freshly grated

½ cup dry white wine

1 tbsp all-purpose flour

3 tbsp butter

Splash of dry sherry

Salt and pepper to taste


Directions:

  1. Slice onions into super thin rings using a mandoline slicer. Preheat a Dutch oven with butter over medium-low heat. Add the onions, a pinch of salt, and cook, stirring occasionally until the onions are deeply caramelized, about 45 minutes. 
  2. Meanwhile, cook the sweet potato toasts according to package directions.
  3. Once the onions are deeply caramelized, add the white wine and sherry, and allow to boil and halve in volume. Add the flour, and stir until the flour is dispersed in the onions and no clumps remain. Add the broth and bring to a boil for 5 minutes.
  4. Place an oven rack in the top third of the oven and turn the oven to broil. Transfer the soup into four oven-safe ramekins, and place the sweet potato toasts over the soup, sprinkle with the gruyere cheese, and place the ramekins onto a baking sheet. Place in the oven, and broil until the cheese is melted a golden brown, about 3-4 minutes. Enjoy!

Notes: we recommend using a mandoline slicer to get the onions as thin and evenly sliced as possible. Caramelization timing will vary based on the thickness of your onions.
