Chipotle Chicken Wraps with Sweet Potato Fries

These Chipotle Chicken Wraps with Sweet Potato Fries are a perfect, nutritious picnic meal! They are dressed with a dairy-free chipotle dressing and stuffed with chili-lime chicken, cabbage slaw, crushed chips, and avocado. Serve these with sweet potato fries and extra chipotle dressing as a dip for the wraps and the fries!

Ingredients:

Shop ingredients at your local Kroger store.

  • 1 bag Roots sweet potato fries
Chili-Lime Chicken
  • 1.5 lb chicken tenders
  • 2 tbsp avocado oil
  • 1 tbsp balsamic vinegar
  • 1 garlic, minced
  • 1 tsp chili powder
  • ½ tsp salt
  • zest of 1 lime

Wraps

  • 4-5 large burrito tortillas
  • 4 cups pre-cut cabbage and carrot mix 
  • ¼ cup chopped cilantro
  • 2 tbsp tahini chipotle dressing
  • 1 lime, juiced
  • 1 avocado
  • crushed tortilla chips
  • pinch of sea salt

Dairy-Free Chipotle Dressing

  • ½ cup cashew butter
  • 4 tsp adobo sauce
  • 1 lime, juiced
  • ½ tsp maple syrup
  • 4-6 tbsp of water, for thinning
  • pinch of salt

Optional additions: shredded cheddar cheese, extra lime juice

Instructions:

  1. Preheat the air fryer to 400° F. 
  2. Add the chicken to a medium-sized bowl with the remaining ingredients. Mix everything until the chicken is well coated in the marinade. Cover and place in the fridge.   
  3. Meanwhile, prepare the chipotle dressing by mixing all of the ingredients except water in a small mixing bowl. Whisk until well combined. Add 1 tbsp of water at a time until it reaches the desired consistency. Set aside.
  4. Add the pre-cut cabbage slaw to a mixing bowl with cilantro, lime juice, 2 tbsp of the chipotle dressing, and a pinch of salt. Toss until well coated. 
  5. Cook the chicken in a hot skillet on one side for 5-7 minutes, then flip and cook on medium/low heat for 4-5 minutes. 
  6. Meanwhile, cook the sweet potato fries in the air fryer for 12-14 minutes, until slightly golden and crispy.
  7. Prepare your wraps! Add a couple of spoonfuls of the dressing to the tortilla, then add a layer of the cabbage slaw, sliced chicken, crushed tortilla chips, avocado, and optional shredded cheese. Tightly wrap and cut diagonally. 
  8. Serve the wraps with the sweet potato fries and extra dressing for dipping. Enjoy!
