Chimichurri Crinkle Cut Fries with Whipped Feta Sauce

Chimichurri Fries
  • 1 bag Roots Crinkle Cut Fries
  • ⅓ cup extra virgin olive oil
  • ½ cup finely chopped parsley 
  • 2 stalks green onion, finely chopped
  • 2 tbsp white vinegar
  • 1-2 garlic cloves, minced
  • ¼ tsp red pepper flakes (optional, for spice)
  • ½ tsp smoked paprika
  • sea salt, to taste

Whipped Feta Sauce

  • 1 6 oz block feta cheese
  • ¼ cup milk (dairy or unsweetened non-dairy)
  • 1 tbsp lemon juice

Instructions:

  1. Preheat the oven to 400° F. 
  2. Add the chopped parsley, green onion, garlic, vinegar, olive oil, and salt to a small mixing bowl and mix until everything is well combined. Set aside. 
  3. Add the whipped feta ingredients to a food processor and pulse until creamy. Pour the mixture into a small serving bowl for the fries. 
  4. Add the bag of crinkle-cut fries to a baking sheet lined with parchment paper and season with the smoked paprika and salt. Bake for 25 minutes. 
  5. Add small spoonfuls of the chimichurri salsa to the fries, drizzled with the whipped feta sauce. Serve fresh, and enjoy!
