Chimichurri Fries- 1 bag Roots Crinkle Cut Fries
- ⅓ cup extra virgin olive oil
- ½ cup finely chopped parsley
- 2 stalks green onion, finely chopped
- 2 tbsp white vinegar
- 1-2 garlic cloves, minced
- ¼ tsp red pepper flakes (optional, for spice)
- ½ tsp smoked paprika
- sea salt, to taste
Whipped Feta Sauce
- 1 6 oz block feta cheese
- ¼ cup milk (dairy or unsweetened non-dairy)
- 1 tbsp lemon juice
Instructions:
- Preheat the oven to 400° F.
- Add the chopped parsley, green onion, garlic, vinegar, olive oil, and salt to a small mixing bowl and mix until everything is well combined. Set aside.
- Add the whipped feta ingredients to a food processor and pulse until creamy. Pour the mixture into a small serving bowl for the fries.
- Add the bag of crinkle-cut fries to a baking sheet lined with parchment paper and season with the smoked paprika and salt. Bake for 25 minutes.
- Add small spoonfuls of the chimichurri salsa to the fries, drizzled with the whipped feta sauce. Serve fresh, and enjoy!
