These Chicken Shawarma Bowls with Sweet Potato Fries are perfect for meal prepping throughout the week because they are packed with flavor and perfectly wholesome! Ingredients:

Shop ingredients at your local Kroger store.

  • ½ bag Roots Sweet Potato Fries
  • 6 chicken thighs, cut into bite-sized pieces
  • ½ red onion
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 2 tbsp extra virgin olive oil
  • 2 tsp cumin 
  • 2 tsp paprika
  • 1 tsp salt

Other Bowl Additions

  • sliced cucumbers
  • cherry tomatoes, halved
  • white rice or quinoa
  • hummus
  • feta crumbles
  • chopped parsley
Garlic Tahini Sauce
  • ½ cup tahini
  • ¼ cup lemon juice
  • 3 tbsp garlic cloves, minced
  • 6 tbsp water
  • small pinch of salt

Instructions:

  1. Preheat the oven to 400°F. 
  2. Marinate the chicken in a bowl with lemon juice, olive oil, and spices. Set aside. 
  3. Meanwhile, roughly chop the red onions. 
  4. Place the chicken and red onions on one side of a baking sheet lined with parchment paper. Place the sweet potato fries on the other side of the baking sheet. Bake for 20 minutes.
  5. Meanwhile, whisk the garlic tahini sauce ingredients in a bowl. 
  6. Assemble your bowl with rice or quinoa, cucumbers, tomatoes, chicken, sweet potato fries, a small scoop of hummus, feta crumbles, fresh parsley, and a squeeze of lemon. Enjoy!
