Cheesy Sweet Potato Toast
This Cheesy Pesto Sweet Potato Toast is the perfect way to elevate avocado toast! Made with homemade walnut pesto, this toast brings together fresh flavors while offering delicious healthy fats. You can use homemade pesto, but if you already have a jar of store-bought pesto in the fridge, use that to make this recipe even quicker!

Ingredients:
Ingredients
- 2 eggs
- 2 sweet potato toasts
- ½ avocado
- ¼ cup grated cheddar
- salt and pepper, to taste
Pesto
- 2 cups fresh basil
- ½ cup extra virgin olive oil
- ⅓ cup grated parmesan
- ¼ cup walnuts
- 3 tbsp lemon juice
- pinch of salt
Instructions:
- Preheat the oven to 400° F.
- Lay the sweet potato toasts on a baking sheet lined with parchment paper and bake for 17-20 minutes, until golden and crispy.
- Meanwhile, prepare the pesto by adding all of the ingredients to a food processor and pulsing until smooth. Set aside.
- Add 2 tbsp of the pesto to a hot skillet and mix around with a spoon. Crack each egg over the pesto sauce and sprinkle a pinch of the cheese on top. Cover and let it cook to your liking!
- Mash avocado over each toast and place the fried egg on top. Sprinkle the remaining cheese and serve with cracked black pepper and more fresh pesto.
Notes:
- Store leftover pesto in the fridge for up to five days
- Swap homemade pesto for storebought pesto for less prep time!
