Breakfast Bowl with Sweet Potato Croutons
These sweet potato breakfast bowls are packed with flavor, protein, and healthy fats. The savory, cooked chicken sausage, crispy sweet potatoes, and runny egg make for the most delicious bite. They are easy to make and can even be enjoyed for dinner! Make them paleo or serve with quinoa for a healthy whole grain and protein addition.

- 2 eggs
- 2 tbsp cooking oil or butter
- 1 5 oz container fresh baby spinach
- 2 chicken sausages, diced
- 1 cup sweet potato croutons
- sea salt and pepper, to taste
Optional: cooked quinoa, avocado, shredded parmesan, and/or salsa verde for topping
Instructions:
- Preheat the air fryer to 400° F.
- Cook the sweet potato croutons for 8-10 minutes, until slightly golden and crispy.
- Meanwhile, cook the chicken sausage for about 5 minutes in a hot skillet with 1 tbsp of oil or butter over medium heat. Mix occasionally to ensure the sausage does not burn.
- Remove the sausage from the skillet and add the spinach. Cook down until wilted.
- Remove the spinach from the pan and add 1 tbsp of butter. Cook the eggs to your preference and season with salt and pepper.
- Serve your bowls! Add the quinoa, chicken sausage, spinach and sweet potato croutons to a bowl and top it off with the fried egg. Sprinkle optional parmesan and a spoonful of salsa verde and enjoy!
