Sweet Potato Toast with Whipped Goat Cheese

Goat cheese spread on Sweet Potato Toast may be served as a healthy snack in between meals or as a part of a main meal, say a big bowl of salad or a grain bowl. You pick. It all comes together in no time and something family and friends can bond over as they assemble the meal. It also holds well in a container that you can take along to work or for a picnic.

Ingredients:
Shop ingredients at your local Kroger store.
5 - 6 frozen sweet potato toast slices
3 tbsp goat cheese
3 tbsp chopped almonds
1 tbsp of honey or maple syrup
1 tbsp hemp seeds

Instructions:
- Preheat the oven to 400 ̊F. Lay the sweet potato slices on a parchment-lined baking
sheet and bake for 26 minutes or until crisp and golden. Flip them mid-way.
- Once sweet potato toasts have baked, allow to cool for 10 minutes.
- On each toast, spread on some goat cheese, then top with chopped almonds, a drizzle
of honey or maple syrup and a sprinkle of hemp seeds.
- Serve warm or cold.
