This healthy egg sausage burrito has everything you need for a nutritious, flavorful breakfast! It has chicken sausage, eggs, spinach, avocado, and sweet potato croutons. Serve this with your favorite salsa and enjoy!

Ingredients:

4 eggs

1 chicken sausage, quartered

1 red bell pepper, chopped

1 cup shredded cheddar cheese

¾ cup sweet potato croutons

½ white onion, chopped

½ cup baby spinach
-
½ avocado
-
4-5 whole wheat tortillas

Pinch of sea salt and pepper
Optional toppings: salsa, cilantro, guacamole
Instructions:

In a medium-sized skillet, heat 2 tbsp of avocado oil. Add the onion, chicken sausage, and red bell pepper. Sauté until onions are translucent and chicken sausage is slightly browned, about 7 minutes. Remove this from the pan and set aside

In a bowl, whisk the egg, salt and pepper. Add the shredded cheese and mix until everything is well combined.

Add about 1 tbsp of butter to the warm skillet. Cook the eggs over medium-low heat to your desired preference.

In an air fryer, cook the sweet potato croutons at 400°F for 11 minutes or until slightly crispy.

Begin warming the tortillas in the microwave for 30 seconds to make them pliable and assemble your burrito!

Add small spoonfuls of the eggs to one side of the tortilla (leaving room on side ends to fold in) the sausage/veggie mix, sweet potato croutons, a small handful of spinach, avocado slices, and your preferred salsa.

Fold in the sides of the tortilla towards the center, then begin tightly rolling the tortilla from the filling end to the other end.

Cut in half and serve with your favorite toppings. Enjoy!
